Nine-Michelin stars Alain Ducasse says SPOON is a meeting place of international culinary techniques and products

Hong Kong is one of the world's most dynamic culinary cities, according to international chef Laurent Andre, chef de cuisine of newly opened restaurant "SPOON by Alain Ducasse".
"As a chef, it is exciting to move to a new and exotic place, and Hong Kong is renowned for its diversity of cuisine and variety of products and ingredients," said Mr Andre. "With its stunning views of Victoria harbour, this restaurant is certain to become known as one of Hong Kong's hottest dining experiences."
The SPOON concept was first launched in Paris in 1998 and introduces a modern twist to classical French cuisine. Founded by nine-Michelin Star chef Alain Ducasse, SPOON restaurants have opened in Mauritius, St Tropez, London, Paris, Carthage and Gstaad as well as Hong Kong.

Mr Ducasse said that SPOON is the meeting place of culinary techniques and products from the Mediterranean world, Asia and the Americas.
The menu is not organised in a usual progression of first course, main course, cheese and dessert, but reflects a concept that allows each guest to tailor-make their own meal. Each section is divided into three columns, allowing guests to mix and match their own main course, sauce and accompaniments.
"During my travels, I have come across many different products and techniques which are of great interest to me. I wanted to bring them together and share them. The idea is to have a menu that has something available for everyone," said Mr Ducasse.
SPOON is located in Hong Kong's Intercontinental Hotel.
